Watermelon Salsa

Level 2 Day 6 and onwards. Wait until Level 2 Day 26 to add feta cheese.

Ingredients

  • 4 cups watermelon Diced.
  • ½ cup red onion Diced.
  • 2 Tbsp fresh jalapeno pepper Minced.
  • 1 tsp Himalayan pink sea salt
  • 3 tomatoes Seeds removed, diced.
  • 2 Tbsp fresh cilantro Chopped.
  • ½ cup feta cheese Level 2 week 4

Instructions

  • Combine all ingredients except watermelon in a large bowl and gently toss.
  • Fold watermelon in just before serving.
  • Serve as a refreshing side or over lettuce greens.
