Ingredients
- 4 cups watermelon Diced.
- ½ cup red onion Diced.
- 2 Tbsp fresh jalapeno pepper Minced.
- 1 tsp Himalayan pink sea salt
- 3 tomatoes Seeds removed, diced.
- 2 Tbsp fresh cilantro Chopped.
- ½ cup feta cheese Level 2 week 4
Instructions
- Combine all ingredients except watermelon in a large bowl and gently toss.
- Fold watermelon in just before serving.
- Serve as a refreshing side or over lettuce greens.
