These were so delicious!!! I made it in the cast iron skillet, I cooked it for the recommended 20 minutes, but then mixed it up and put it back in the oven to soak up all the juices and cook the veggies just a bit longer. This one will be a weekly favorite for sure!!!

Okay mine turned out nothing like the photo. Everything turned watery in the oven. I think it would be better to have done this on cast iron over the stove top than in the oven.
Very yummy, I served it on a bed of spring mix and added fresh tomatoes. Odd though, when I uploaded my meal pic the Betr AI told me the yellow peppers weren’t a level 1 food, I followed recipe and the photo here shows yellow, red and green bell pepper.
Delicious made it in a cast iron pan with chicken thighs. Added some zucchini. I would serve this for company.
