Cranberry Orange Muffins

This flavor combination screams holiday spirit, but the best part is that no one will be able to tell it’s sugar free! Create new family memories while staying in good health by making this Level 3 treat.

  • MAKES 1 Dozen

Ingredients

  • 2 cups fresh cranberries
  • 1 1/2 cups oat flour
  • 1/2 cup almond flour
  • 1/2 tsp pink himalayan salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup coconut oil
  • 1/2 cup plain nonfat Greek yogurt
  • 1/3 cup maple syrup
  • 2 tsp vanilla stevia
  • 1 tbsp orange zest

Instructions

  1. Preheat oven to 375 degrees.
  2. Place cranberries in food processor, and pulse until they’re no larger than ¼ of their original size.
  3. In a medium bowl mix together coconut oil, yogurt, maple syrup, and vanilla. Then add cranberries and orange zest and stir together.
  4. In a small bowl mix together remaining dry ingredients (baking soda, baking powder, pink salt, almond flour, and oat flower).
  5. Then incorporate dry ingredients into the medium bowl and mix well.
  6. Pour batter 3/4 of the way up into lined muffin tins.
  7. Bake in preheated oven for 20-25 mins until brown on top.

Notes

Frozen and thawed cranberries that have been patted dry to remove any excess moisture may be substituted for the fresh.
