Cranberry Orange Muffins

Ingredients
- 2 cups fresh cranberries
- 1 1/2 cups oat flour
- 1/2 cup almond flour
- 1/2 tsp pink himalayan salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup coconut oil
- 1/2 cup plain nonfat Greek yogurt
- 1/3 cup maple syrup
- 2 tsp vanilla stevia
- 1 tbsp orange zest
Instructions
- Preheat oven to 375 degrees.
- Place cranberries in food processor, and pulse until they’re no larger than ¼ of their original size.
- In a medium bowl mix together coconut oil, yogurt, maple syrup, and vanilla. Then add cranberries and orange zest and stir together.
- In a small bowl mix together remaining dry ingredients (baking soda, baking powder, pink salt, almond flour, and oat flower).
- Then incorporate dry ingredients into the medium bowl and mix well.
- Pour batter 3/4 of the way up into lined muffin tins.
- Bake in preheated oven for 20-25 mins until brown on top.
Notes
Frozen and thawed cranberries that have been patted dry to remove any excess moisture may be substituted for the fresh.
