Crispy CRUSH YOUR WORKOUT Sweet Potato Brussel Sprouts

Ingredients

  • 1 lb. Brussel Sprouts (trimmed and halved)
  • 1 large Sweet Potato
  • 3 tbsp. Coconut oil
  • 1 tsp. Cumin
  • 2 cloves Garlic, smashed
  • 1/2 tsp. Garlic salt
  • 1 tsp. Himalayan pint sea salt
  • 3 tbsp Hemp seeds
  • 3 tbsp. Flax seeds
  • 1 sprig Fresh Thyme

Instructions

  • Pre-heat oven to 400°.
  • Cut sweet potatoes into bite sized squares. and mix together with Brussels sprouts.
  • Add coconut oil and spices (except thyme), and seeds. Mix together to evenly coat potatoes and sprouts.
  • Spread the mixture on parchment paper in a rimmed baking sheet and bake for 20 minutes. Turn the oven to broil for an additional 5 minutes, or until nicely browned/crisped. Watch carefully so as not to burn.
  • Remove from oven, garnish with thyme and serve.
