Ingredients
- 1 lb. Brussel Sprouts (trimmed and halved)
- 1 large Sweet Potato
- 3 tbsp. Coconut oil
- 1 tsp. Cumin
- 2 cloves Garlic, smashed
- 1/2 tsp. Garlic salt
- 1 tsp. Himalayan pint sea salt
- 3 tbsp Hemp seeds
- 3 tbsp. Flax seeds
- 1 sprig Fresh Thyme
Instructions
- Pre-heat oven to 400°.
- Cut sweet potatoes into bite sized squares. and mix together with Brussels sprouts.
- Add coconut oil and spices (except thyme), and seeds. Mix together to evenly coat potatoes and sprouts.
- Spread the mixture on parchment paper in a rimmed baking sheet and bake for 20 minutes. Turn the oven to broil for an additional 5 minutes, or until nicely browned/crisped. Watch carefully so as not to burn.
- Remove from oven, garnish with thyme and serve.
