French Onion Soup

Ingredients

  • 2 large red onions Cut in half top to bottom and then thinly sliced in the same direction.
  • 4 cloves garlic Minced.
  • to taste liquid stevia Go easy on this - a little goes a LOOOONG way!
  • 4 cups organic low sodium beef broth
  • ¼ tsp black pepper

Instructions

  • Preheat non-stick saucepan over medium heat. Place onions and garlic in pan and cook uncovered 5- 10 minutes, stirring occasionally.
  • Stir in stevia and cook an additional 10-15 minutes until onions are caramelized.
  • Add beef broth and bring to boil.
  • Reduce heat to simmer, cover, and cook for 20 minutes more.
  • Add black pepper. Enjoy!
  • Tip: Double the recipe and refrigerate or freeze for later.

    This recipe seems so basic, and it is, but the results will amaze you! It makes a delicious soup that is very light and easy on the stomach, but also has great flavor and even a little bit of spice from the black pepper (just the right amount). I recommend skipping the liquid stevia. Having made this twice now, I believe it’s much better just letting the natural flavor (and light sweetness) of the caramelized red onions shine on their own. This is a winner!
