Edamame Cobb Salad

Ingredients

  • 1 head romaine lettuce washed and chopped
  • 12 oz organic edamame boiled per package instructions and shelled
  • 2 eggs hard boiled and diced
  • 1 avocado diced
  • 4-5 medium radishes thinly sliced and cut into half moons
  • 1-2 Persian cucumbers (or 1 regular cucumber) thinly sliced and cut into half moons
  • 5-6 cherry tomatoes cut into quarters
  • to taste Himalayan pink sea salt
  • to taste black pepper freshly ground
  • Betr ranch dressing optional

Instructions

  • Construct salad and drizzle dressing (if used) on top. Alternatively, throw ingredients together in a bowl and toss with dressing to coat evenly.
  • Top with salt and pepper to taste.
  • Refrigerate any leftovers, preferably in a mason jar.
