Ingredients
- 1 head romaine lettuce washed and chopped
- 12 oz organic edamame boiled per package instructions and shelled
- 2 eggs hard boiled and diced
- 1 avocado diced
- 4-5 medium radishes thinly sliced and cut into half moons
- 1-2 Persian cucumbers (or 1 regular cucumber) thinly sliced and cut into half moons
- 5-6 cherry tomatoes cut into quarters
- to taste Himalayan pink sea salt
- to taste black pepper freshly ground
- Betr ranch dressing optional
Instructions
- Construct salad and drizzle dressing (if used) on top. Alternatively, throw ingredients together in a bowl and toss with dressing to coat evenly.
- Top with salt and pepper to taste.
- Refrigerate any leftovers, preferably in a mason jar.
