Ingredients
Meatballs
- 1 lb lean grass fed organic ground beef
- 2 cloves fresh garlic Chopped.
- 1/2 cup onions diced
- 3 tbsp Italian herb blend
- 3 tbsp hemp seeds Optional.
- 2 tsp grape seed oil
Soup
- 2 tbsp onions diced
- 2 cloves garlic minced
- 1 cup spinach Chopped.
- 3 cups organic low sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ tsp Himalayan pink sea salt
- to taste ground black pepper
Instructions
- Add chopped garlic, onion, and herb blend to the meat and mix well. Form into 10-12 meatballs. Roll in hemp seeds for an extra crunch and extra omega 3’s.
- Warm skillet to medium-high heat. Add grapeseed oil
- Simmer meatballs in skillet for 10-15 minutes, turning occasionally.
- Add onions, minced garlic, and about 1 ½ cups of broth to a medium soup pot. Cook until onions become translucent. Add spinach and stir until spinach starts to wilt. Add remaining seasonings.
- Add the meatballs and the remaining broth to the pot. Bring to a boil until meatballs are heated with soup. Enjoy!

Yummy and easy!
Easy, quick; I added cilantro to the meatballs to increase flavor, and julienned yellow bell pepper to the soup for color and a bit of texture. Excellent!
