Lemon Basil Cod with Asparagus

Ingredients

  • 1 bunch asparagus
  • ¼ tsp Himalayan pink sea salt
  • to taste ground black pepper
  • 1 lb cod
  • 1 Tbsp fresh basil Minced.
  • 2 lemons 1 juiced, 1 sliced.

Instructions

  • Preheat the oven to 400° F.
  • Use a large sheet of parchment paper or aluminum foil. If using aluminum foil, always use the dull side of the foil for food contact.
  • Place asparagus spears in center of sheet and sprinkle with salt and pepper.
  • Arrange cod on top of asparagus.
  • Pour lemon juice on top, arrange lemon slices on top of the cod, and sprinkle with fresh basil.
  • Seal parchment or foil by tenting it over the cod and folding tightly on all sides.
  • Bake for 10-20 minutes depending on thickness of fish. Fish will be flakey when done.

Alternative Preparation

  • Try this recipe substituting red onions for asparagus and top with marinated tomatoes.

    Easy to cook while catching up on Downtown Abbey. Mine was thick and became flaky after 20 min. I set an alarm and checked at 10 min, then again at 15min. Had a bite, can’t wait to dig in!
