Crab Cakes

Ingredients

  • ½ cup Panko style bread crumbs
  • 1 lb fresh crab meat
  • 1 tsp dried parsley
  • ½ tsp dried tarragon
  • ½ tsp paprika
  • 1 tsp lemon juice
  • ¼ tsp cayenne
  • ¼ tsp white pepper
  • ¼ tsp dry mustard
  • ¼ tsp seafood Seasoning
  • 4 egg whites

Instructions

  • In bowl, combine crabmeat and remaining ingredients.
  • Mix well and form into 4 to 5 palm-sized patties.
  • Coat each side of patty with Panko breading.
  • Brown in non-stick skillet over medium heat for 3 minutes each side, or place on a George Foreman Grill for 4-5 minutes.
  • Alternatively, place them on a non-stick baking sheet at 350 F for 10-15 minutes. Then broil for 1-2 minutes each side to brown.
  • Serve promptly.

    I loved it. The instructions should say mix everything together but the panko. I mixed it all together including the panko. It still came out delicious.
