One-Pan Toaster Oven Citrus Salmon Salad

Ingredients

  • 12 oz salmon
  • 2 limes 1 juiced and 1 sliced.
  • 1 Tbsp liquid aminos
  • ¼ cup almond butter
  • 6 Tbsp water
  • 3 Tbsp tamari substitute with liquid aminos
  • 1 cup leafy greens
  • 1 blood orange Peeled and segmented.
  • ½ cup cherry tomatoes Sliced.

Instructions

  • Pre-heat toaster oven to 375° F.
  • Marinate salmon in lime juice and aminos.
  • Place salmon on aluminum foil, top with lime slices, and bake for 15 minutes.
  • Combine water, almond butter, and aminos. The sauce should be a bit liquidy and will thicken over time.
  • Arrange orange sections and tomatoes on a bed of leafy greens.
  • Top with salmon and drizzle with sauce.

Notes

Using your toaster oven is actually much faster and easier! Perfect for singles who want something quick and delish. There is something magical about orange, salmon, and freshly ground almond butter.
