Ingredients
- ½ cup apple cider vinegar
- 1 lemon Juiced.
- 1 tbsp low sodium organic vegetable broth
- 1 Tbsp seasoning mix Trader Joe's, Costco, or any brand not containing sugar.
- 1 bulb fresh garlic Separated into cloves and peeled.
- 2 large red onions Halved midline and cut into ⅛ wedges.
- 4 bell peppers Cut half top to bottom, stem, pith, and seeds removed, and cut into wide strips.
- 2 zucchini Cut into rounds.
Instructions
- Preheat oven to 475° F.
- Mix together vinegar, lemon juice, veggie broth, and seasoning. Reserve ¼ cup of liquid mixture for basting and set aside.
- Toss garlic and vegetables in marinade until they are coated.
- Spread evenly on a large roasting pan lined with aluminum foil, dull side up and lightly coated with avocado oil, or lined with parchment paper.
- Roast for 45 minutes, turning and basting with reserved liquid every 10 to 15 minutes.
