Scallop Scampi

Ingredients

  • ¼ cup coconut oil
  • 5 cloves fresh garlic Minced.
  • 1 cup cherry tomatoes
  • ½ red onion Thinly sliced.
  • 10 large sea scallops
  • ¼ tsp Himalayan pink sea salt
  • to taste ground black pepper
  • 2 large zucchini Spiralized and patted dry on paper towels.
  • to taste cilantro
  • to taste red pepper flakes

Instructions

  • In a pan, heat oil on medium and add garlic, stirring for a minute.
  • Add in cherry tomatoes, onions, scallops, salt and pepper.
  • Cover and cook for about 15 minutes, turning Scallops halfway through.
  • Add the zucchini "noodles" to the pan, cover and cook for another 3 minutes.
  • Give one last stir to the contents of the pan, add cilantro and red pepper flakes, and serve.
