Ingredients
- ¼ cup coconut oil
- 5 cloves fresh garlic Minced.
- 1 cup cherry tomatoes
- ½ red onion Thinly sliced.
- 10 large sea scallops
- ¼ tsp Himalayan pink sea salt
- to taste ground black pepper
- 2 large zucchini Spiralized and patted dry on paper towels.
- to taste cilantro
- to taste red pepper flakes
Instructions
- In a pan, heat oil on medium and add garlic, stirring for a minute.
- Add in cherry tomatoes, onions, scallops, salt and pepper.
- Cover and cook for about 15 minutes, turning Scallops halfway through.
- Add the zucchini "noodles" to the pan, cover and cook for another 3 minutes.
- Give one last stir to the contents of the pan, add cilantro and red pepper flakes, and serve.
