Variations

  • Use bay scallops in place of, or in conjunction with, shrimp.

    Add 1/4 of an Avocado- diced.
  • Traditionally ceviche is made with raw shrimp or fish- it’s “cooked” in the lime juice. If you’re feeling adventurous this way, you can add the lime to the shrimp and leave it overnight or until it’s opaque- like you can’t see through it.

    We love the flavors in this dish. I made it late morning so it could marinate placing the shrimp and lemons in the container first and topping with the pick de Gallo. We had it for lunch the next day and it was even better!
