Zoodles and Carrot Noodles

Equipment

  • Spiralizer

Ingredients

  • 2 to 3 zucchini Spiralized.
  • 3 large carrots Spiralized.
  • ¼ cup fresh parsley or microgreens Loosely chopped for garnish.

Sauce

  • 1 large avocado Peeled, pitted and quartered to fit into food processor.
  • 1 cucumber Peeled and sliced to fit into food processor.
  • 1 fresh lemon Juiced
  • 3 cloves fresh garlic Minced.
  • ½ to 1 tsp Himalayan pink sea salt
  • ½ tsp ground black pepper

Instructions

  • Combine avocado, cucumber, lemon, and garlic in a food processor and puree. Sauce should be smooth.
  • Add salt and pepper and blend one more time to ensure it is all incorporated.
  • Place noodles in a large bowl and toss with sauce to evenly coat.
  • Top with garnish and serve immediately.
