- Spiralizer
Ingredients
- 2 to 3 zucchini Spiralized.
- 3 large carrots Spiralized.
- ¼ cup fresh parsley or microgreens Loosely chopped for garnish.
Sauce
- 1 large avocado Peeled, pitted and quartered to fit into food processor.
- 1 cucumber Peeled and sliced to fit into food processor.
- 1 fresh lemon Juiced
- 3 cloves fresh garlic Minced.
- ½ to 1 tsp Himalayan pink sea salt
- ½ tsp ground black pepper
Instructions
- Combine avocado, cucumber, lemon, and garlic in a food processor and puree. Sauce should be smooth.
- Add salt and pepper and blend one more time to ensure it is all incorporated.
- Place noodles in a large bowl and toss with sauce to evenly coat.
- Top with garnish and serve immediately.
