5 Ingredient Egg Salad

Ingredients

  • 8 hard boiled eggs Peeled and chopped.
  • 4 Tbsp organic Dijon mustard
  • cup cherry tomatoes
  • 2 ½ tsp curry powder
  • to taste Himalayan pink sea salt
  • 2 cups organic mixed greens (spinach, kale, bibb lettuce, etc...)

Instructions

  • Mix eggs, mustard, tomatoes, curry powder and salt together.
  • Serve on ba bed of mixed greens and enjoy!

Notes

Other ways to enjoy this dish are adding pickle relish in place of the curry. Make sure it has no added sugars and that everything is level one. Buying bulk boiled eggs at Costco makes this dish REALLY easy and simple to whip up on the go.
