Ingredients

cup
apple cider vinegar

lemon
Juiced.

low sodium organic vegetable broth

Tbsp
seasoning mix
Trader Joe's, Costco, or any brand not containing sugar.

bulb
fresh garlic
Separated into cloves and peeled.

large
red onions
Halved midline and cut into ⅛ wedges.

bell peppers
Cut half top to bottom, stem, pith, and seeds removed, and cut into wide strips.

zucchini
Cut into rounds.
Instructions
Preheat oven to 475° F.
Mix together vinegar, lemon juice, veggie broth, and seasoning. Reserve ¼ cup of liquid mixture for basting and set aside.
Toss garlic and vegetables in marinade until they are coated.
Spread evenly on a large roasting pan lined with aluminum foil, dull side up and lightly coated with avocado oil, or lined with parchment paper.
Roast for 45 minutes, turning and basting with reserved liquid every 10 to 15 minutes.
