Add chopped garlic, onion, and herb blend to the meat and mix well. Form into 10-12 meatballs. Roll in hemp seeds for an extra crunch and extra omega 3’s.
Warm skillet to medium-high heat. Add grapeseed oil
Simmer meatballs in skillet for 10-15 minutes, turning occasionally.
Add onions, minced garlic, and about 1 ½ cups of broth to a medium soup pot. Cook until onions become translucent. Add spinach and stir until spinach starts to wilt. Add remaining seasonings.
Add the meatballs and the remaining broth to the pot. Bring to a boil until meatballs are heated with soup. Enjoy!
