Take a sheet of brown rice paper and run it under warm water.
Arrange half of the filling ingredients: shrimp, mint or basil, mixed lettuce, and carrots, in a row left to right about one inch in from the front edge of each of the sheets of rice paper.
Pull the front edge up and over the row of filling, tucking it under the filling.
Wrap the left and right edges toward the center and roll away from you to finish.
