Sweet Potato Toast

Ingredients

  • 1 sweet potato

The Italian

  • 1 egg Fried.
  • 1 avocado Sliced
  • 6 leaves fresh basil

The Superfood PBJ

  • ½ cup fresh blueberries
  • 2 Tbsp chia seeds
  • 1 Tbsp almond butter
  • 1 tsp raw cacao

The Gypsy

  • 1 Tbsp tahini
  • ½ cup goji berries

The Guac Attack - Mash avocado and mix with all other ingredients.

  • 1 avocado Sliced.
  • 1 Tbsp yellow onion Minced.
  • ¼ tomato Chopped.
  • tsp onion powder
  • tsp garlic powder
  • tsp cayenne Optional

Instructions

  • Pre-heat oven or toaster oven to 400° F.
  • Cut sweet potato in half horizontally. Place each half cut side down and then slice to make ¼" thick "toast" slices.
  • Bake potato slices for 10 minutes.

  • They keep for 5 days!
