1lb. Brussel Sprouts (trimmed and halved)
1largeSweet Potato
3tbsp.Coconut oil
1tsp.Cumin
2clovesGarlic, smashed
1/2tsp.Garlic salt
1tsp.Himalayan pint sea salt
3tbspHemp seeds
3tbsp.Flax seeds
1sprigFresh Thyme
Instructions
Pre-heat oven to 400°.
Cut sweet potatoes into bite sized squares. and mix together with Brussels sprouts.
Add coconut oil and spices (except thyme), and seeds. Mix together to evenly coat potatoes and sprouts.
Spread the mixture on parchment paper in a rimmed baking sheet and bake for 20 minutes. Turn the oven to broil for an additional 5 minutes, or until nicely browned/crisped. Watch carefully so as not to burn.
