Ingredients

watermelon
Cubed.

cucumber
Peeled, seeded, cut in half lengthwise and sliced.

fresh mint
Chopped or thinly sliced.

extra virgin olive oil

fresh lime juice
1
dash
Himalayan pink sea salt

dash
ground black pepper
1 to 2
Tbsp
feta cheese (Level 2 Day 26 and onward)
crumbled
Instructions
In a large bowl, add watermelon, cucumber and mint.
In a small bowl combine oil, lime juice, salt and pepper and whisk well. Pour over watermelon mixture and gently toss and serve.
If Level 2 Day 26 or later, sprinkle feta cheese on top and serve.
Notes
If you plan on waiting to serve this, wait to add the oil mixture and feta until just before serving.
