Summertime Watermelon Salad

Level 2 Day 6 and onward. Wait until Level 2 Day 26 to add feta cheese.

Ingredients

  • 3 to 4 cups watermelon Cubed.
  • 1 large cucumber Peeled, seeded, cut in half lengthwise and sliced.
  • 2 tsp fresh mint Chopped or thinly sliced.
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lime juice
  • 1 dash Himalayan pink sea salt
  • 1 dash ground black pepper
  • 1 to 2 Tbsp feta cheese (Level 2 Day 26 and onward) crumbled

Instructions

  • In a large bowl, add watermelon, cucumber and mint.
  • In a small bowl combine oil, lime juice, salt and pepper and whisk well. Pour over watermelon mixture and gently toss and serve.
  • If Level 2 Day 26 or later, sprinkle feta cheese on top and serve.

Notes

If you plan on waiting to serve this, wait to add the oil mixture and feta until just before serving.
