Ingredients
- 1 medium beet, cooked
- 1 can chickpeas, drained and rinsed
- 2 cloves garlic
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon ground black pepper
- Pinch of Pink Himalayan salt
Directions
Chop the cooked beet into small pieces
In a food processor, combine the chopped beet, chickpeas, garlic, lemon juice, olive oil, ground black pepper, and Pink Himalayan salt
Blend until smooth and creamy, scraping down the sides as needed
Taste and adjust the seasoning, adding more salt, pepper, or lemon juice if desired
