This Berry Spinach Quinoa Salad is a delicious and nutritious option for any meal. The combination of fresh berries, creamy avocado, and protein-rich quinoa creates a satisfying and wholesome salad that's as delightful to eat as it is beautiful to look at!
Ingredients
- 1 cup quinoa (uncooked)
- 2 cups water
- 4 cups fresh spinach
- 1 cup blueberries

1 cup raspberries
- 1 avocado, sliced
Directions
Add quinoa and water to a small pot, boil, cover the pot, reduce heat to low, and simmer for 15 minutes
Remove the lid and rest for 10 minutes, fluff with a fork
In a large bowl, add the spinach, quinoa, blueberries, raspberries
If dressing is desired, pour a few tablespoons over the salad and toss to combine
- Add sliced avocado on top (optional)
