Ingredients
- 3 cups cooked chicken, shredded or diced
- 2 tsp cumin
- ½ tsp Himalayan pink sea salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 32 oz low-sodium chicken broth
- 1 small sweet potato, diced
- 1 cup diced bell pepper
- 2 zucchini, diced
- 1 bowl fresh pico de gallo (about 1 cup)
- 1 cup fresh cilantro, chopped
Directions
Mix the cumin, salt, pepper, paprika, and garlic powder in a small bowl.
- Combine the sweet potato, bell pepper, spices, and 1 cup of chicken broth in a Dutch oven or large soup pot. Bring to a boil, then reduce the heat to a simmer. Cook for about 20 minutes or until the vegetables are tender.
- Add the cooked chicken, diced zucchini, pico de gallo, and the remaining chicken broth to the pot. Stir to combine and let simmer for an additional 20–30 minutes.
- Serve hot, topped with fresh cilantro.
