This Spanish Quinoa "Rice" is a flavorful and satisfying alternative to traditional rice dishes. With the aromatic blend of spices and vegetables, it's sure to become a favorite in your meal rotation.
Ingredients
- 1 tbsp avocado oil (or use 1/4 cup water)
- 1 cup onion, diced
- 1 red bell pepper, diced
- 1 clove garlic, minced (or 1 tsp garlic powder)
- 1 cup quinoa, uncooked and rinsed
- 1 cup diced tomatoes
- 2 cups low-sodium vegetable broth
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Pink Himalayan salt and pepper, to taste
Directions
- In a medium-sized pan, heat oil or water over medium-high heat
- Add onion and bell pepper and cook for 3 minutes
Add quinoa and garlic, and stir frequently
Cook for another 5 minutes or until quinoa turns slightly golden brown
Add vegetable broth, tomatoes, oregano, salt, and pepper and stir
Bring to a boil, cover the pot, reduce heat to low, and simmer for 15 minutes
When done, remove the lid, fluff it with a fork, and let it sit for 10-15 more minutes
Garnish with fresh herbs like parsley or cilantro, if desired
