Ingredients

3 cups watermelon, cubed
- 1 large cucumber, peeled, seeded, cut in half lengthwise, and sliced
- 2 tsp fresh mint, chopped or thinly sliced
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh lime juice
- 1 dash Himalayan pink sea salt
- 1 dash ground black pepper
- 2 tbsp feta cheese, crumbled (optional, Level 2 Week 4 onward)
Directions
In a large bowl, combine the cubed watermelon and sliced cucumber
Add the chopped fresh mint to the bowl
In a small bowl, whisk together the extra virgin olive oil, fresh lime juice, Himalayan pink sea salt, and ground black pepper to make the dressing
Pour the dressing over the watermelon, cucumber, and mint. Toss gently to combine
If using, sprinkle the crumbled feta cheese over the salad
Serve immediately, or chill in the refrigerator for 15-20 minutes to let the flavors meld
