I made the quinoa in my rice cooker and it turned out perfect! I made four servings so I could just reheat in the morning and top with berries. Good recipe – I will be adding this to my weekly meal prep.

Sounds good and I’ll try it but man, you hit one of my pet peeves with this one: Describe it as “Cooking time: 10 minutes” and then say to cook the quinoa for 20 minutes after bringing things to a boil? Come on: If I had the ingredients and didn’t read though the whole recipe ahead of time, I’d be pretty darn disappointed that breakfast would not be ready before I had to leave.

I’m having a quinoa and fruit w apples, strawberries, and blueberries. It’s really good however it was a bit thick after simmering for 20 minutes so I did add a couple of tablespoons of almond milk not in the pot but in my bowl then I put the sautéed apples and the honey on top and it’s quite delicious.

Great recipe and very filling. I may try it with almond milk next time. Thanks for the tips.

Quinoa is typically cooked using a 1 part quinoa to 2 parts liquid. Ellie, you are correct if the full cup of water/milk was used with the cooked quinoa.

I added only 1/4 almond milk to the cooked quinoa and apples. Added the cinnamon and stevia instead of honey. Topped it off with the blueberries and strawberries. It was Yummy!
