Ingredients
- 2 cups medjool dates, pitted and very finely chopped
-
½ cup mixed nuts (almonds, cashews, walnuts, pecans), roughly chopped
- 3 tablespoons coconut flakes, toasted
Directions
Place the finely chopped Medjool dates in a large bowl
In a small skillet over medium heat, toast the coconut flakes until they are golden brown, stirring frequently to prevent burning. Remove from heat and set aside
Add the mixed nuts and toasted coconut flakes to the bowl with the dates. Using your hands or a spoon, mix everything together until well combined. The mixture should be sticky and hold together when pressed
Line a baking dish or tray with parchment paper. Transfer the date and nut mixture to the dish and press it down firmly and evenly using your hands or a spatula
Refrigerate the mixture for at least 1-2 hours to allow it to firm up
Once firm, lift the mixture out of the dish using the parchment paper and cut it into bars of your desired size
Store the energy bars in an airtight container in the refrigerator for up to a week
Recipe Note
Option to add in some seeds like chia seeds or pumpkin seeds or to make them chocolately some cacao powder (2-3 Tbsp)
