Ingredients
- 1 can chickpeas, drained and rinsed (or 3 cups cooked chickpeas from scratch)
- 1 tbsp avocado oil
- 1/2 onion, chopped
- 1 bell pepper, diced
- 1 tomato, chopped

1 cup kale
- 1/2 tsp turmeric
- 1/2 tsp cumin
- Pink Himalayan salt and pepper, to taste
Directions
In a large skillet, heat the avocado oil over medium heat
Add the onion and sauté until translucent
Add the bell pepper and tomato and cook until softened
Add the chickpeas, turmeric, cumin, salt, and pepper. Cook for another 5 minutes
Add kale and cook for 3-5 minutes or until kale is wilted and tender
