Ingredients

1 package tempeh, cut into cubes

1 grapefruit, juiced

1 lemon, juiced

1 lime, juiced

1 orange, zested
- 2 tbsp honey (or a mix of honey and liquid stevia/monk fruit)
- 2 tbsp avocado oil

2 cloves garlic, minced

1 tsp ginger, grated

Pink Himalayan salt, to taste

Ground black pepper, to taste
Directions
- Preheat your oven to 375°F
In a bowl, mix the grapefruit, lemon, and lime juice along with the orange zest, honey, avocado oil, minced garlic, grated ginger, salt, and pepper to create the marinade
Cut the tempeh into cubes and place them in a shallow dish. Pour the marinade over the tempeh, ensuring it's evenly coated. Let it marinate for at least 30 minutes in the refrigerator
Thread the marinated tempeh cubes onto the skewers. If using wooden skewers, soak them in water while the tempeh marinates to prevent burning
Place the marinated tempeh skewers on a baking sheet lined with parchment paper or lightly greased with avocado oil
Bake the tempeh in the oven for about 15-20 minutes, flipping the skewers halfway through, until they are golden brown and slightly caramelized
Grilling Method
- Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water while the tempeh marinates to prevent burning.
- Grill the skewers for about 3-4 minutes per side, or until they are heated through.
