Ingredients

1 lb fresh crab meat

½ cup oats (for grinding)
- 1 tsp dried parsley
- ½ tsp dried tarragon
- ½ tsp paprika
- 1 tsp lemon juice
- ¼ tsp cayenne
- ¼ tsp white pepper
- ¼ tsp dry mustard

¼ tsp seafood seasoning
- 4 egg whites
Directions
Preheat your oven to 375°F
In a food processor or blender, pulse the oats until finely ground to form oat flour. Transfer the oat flour to a shallow dish and set aside
In a large mixing bowl, combine the crab meat, dried parsley, dried tarragon, paprika, lemon juice, cayenne, white pepper, dry mustard, and seafood seasoning. Mix until all ingredients are evenly distributed
In a separate bowl, beat the egg whites until they form stiff peaks
Gently fold the beaten egg whites into the crab mixture until well combined. Be careful not to overmix to maintain the texture of the crab meat
Using your hands, shape the crab mixture into individual patties of your desired size and thickness
Coat each crab cake in the ground oat flour, pressing lightly to adhere the flour to the surface
Place the coated crab cakes onto the prepared baking sheet
Bake in the preheated oven for 15-20 minutes, or until the crab cakes are golden brown and cooked through, flipping halfway through the baking time for even browning
Once cooked, remove the crab cakes from the oven and allow them to cool slightly before serving

Alternatively, brown in non-stick skillet over medium heat for 3 minutes each side, or place on a George Foreman Grill for 4-5 minutes
