Ingredients
- 1 tsp minced garlic
- 1 medium white onion, sliced
- 2 tbsp avocado oil
- 2 lbs fresh tomatoes, chopped
- 4 cups (32 oz) vegetable stock
- 2 tbsp tomato paste

1/4 cup coconut milk, unsweetened
- 1 tsp Himalayan pink salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup fresh basil, optional
Directions
In a large soup pot heat up the avocado oil. Once the oil is hot, add in the minced garlic and sliced onions. Cook down the onions and garlic until the onions are translucent and soft
Add in the tomatoes (whole if wanted but preferably cut them in half for even cooking) and cook on medium-high heat until the tomatoes start to lose their skin. This usually takes about 10-15 minutes
When the tomatoes are done and the skins have separated from the tomatoes place them into a large blender. In that blender add in the vegetable stock, tomato paste, black pepper, salt, coconut milk and garlic powder. Blend until smooth. You can blend the mix in halves if your blender is on the smaller side
Once fully blended you can place the creamy tomato mixture back into the soup pot and heat it on a medium-low setting. When the mixture is hot you can add in the freshly chopped basil
- Once the soup is back to appropriate serving temperature you can ladle the soup into bowls and serve. Enjoy!
