Ingredients
- 2 grapefruits
- 2 medium avocados

1 cup kale
- 3 tablespoons grapefruit juice (from the grapefruits)
- 2 tablespoons apple cider vinegar
- 1/2 shallot, minced
- 1 tablespoon honey
- 1/4 cup extra virgin olive oil

Grapefruit Shallot Vinaigrette:

Remove the kale leaves from the stems and tear them into bite-sized pieces. Rinse thoroughly and pat dry. Place the kale in a large salad bowl
Cut the grapefruits in half. Segment the grapefruits by cutting between the membranes to release the segments, collecting any juice in a small bowl. Set the segments aside for the salad. Reserve 3 tablespoons of the juice for the vinaigrette
In a small bowl, combine the grapefruit juice, apple cider vinegar, minced shallot, and honey. Whisk in the extra virgin olive oil until the vinaigrette is well emulsified. Season with Pink Himalayan salt and freshly ground black pepper to taste
Pour a small amount of the vinaigrette over the kale and massage the leaves gently with your hands until they begin to soften and wilt, about 2-3 minutes
- Slice the avocados in half, remove the pits, and scoop out the flesh. Cut the avocado into thin slices or chunks.
- Add the grapefruit segments and avocado slices to the kale.
- Drizzle the remaining vinaigrette over the salad and toss gently to combine all the ingredients.
