Ingredients
- 2 to 3 tablespoons avocado oil
- 1 very large sweet onion, cut into crescent moons
- 2 to 3 cloves garlic, crushed
- 1 to 2 teaspoons grated fresh ginger

4 large carrots, cut into matchsticks (level 2 option)

6 cups water or homemade stock

2 to 3 teaspoons Herbed Salt Seasoning (see notes)
- 2 cups cooked quinoa
- 2 cups (or more) sliced savoy cabbage
- 1/2 cup chopped cilantro
- Freshly ground black pepper to taste
Directions
Heat the avocado oil in a large pot over medium heat. Add the sliced sweet onion and sauté until translucent and fragrant, about 5-7 minutes
Add the crushed garlic and grated fresh ginger to the pot. Cook for another 1-2 minutes, stirring frequently, until the garlic and ginger are fragrant
Level 2: Stir in the matchstick-cut carrots and cook for an additional 3-4 minutes, allowing them to soften slightly
Pour in the water or homemade stock, then add the Herbed Salt seasoning. Stir to combine and bring the mixture to a gentle boil
Once boiling, reduce the heat to a simmer and add the cooked quinoa and sliced savoy cabbage. Simmer for 10-15 minutes, or until the cabbage is tender
Stir in the chopped cilantro and season with freshly ground black pepper to taste. Adjust the seasoning as needed
Serve the soup hot, garnished with additional cilantro if desired

1/4 cup dried parsley
2 tsp onion powder

1 tsp celery seed
1 tsp marjoram
1 tsp paprika
