Ingredients
- 2 cans of chickpeas, rinsed and drained (or 3 cups cooked chickpeas)
- 1 medium red bell pepper, chopped
- 1 1/2 cups chopped fresh flat-leaf parsley (about 1 bunch)
- 1/2 cup chopped red onion
- 1/2 cup chopped celery, plus leaves (about 2 ribs)
- 3 tablespoons extra virgin olive oil
- 3 tablespoons lemon juice (from 1 to 1 1/2 lemons)
- 2 cloves garlic, pressed or minced
- 1/2 teaspoon Pink Himalayan salt
- 1/2 teaspoon freshly ground black pepper
Lemon Garlic Dressing
Directions
In a large mixing bowl, combine the chickpeas, red bell pepper, parsley, red onion, and celery
In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and black pepper
