Ingredients

3 cloves fresh garlic add additional cloves according to taste

1 tbsp dried oregano

1 organic lemon, washed and zested

1/3 cup freshly squeezed lemon juice

1/4 cup avocado oil
- 3/4 tsp Himalayan pink sea salt

1/4 ground black pepper

4 pork chops, bone-in
Directions
Preheat oven to 425° and place oven rack in the top ? of the oven space, or preheat grill on high
Add all ingredients except pork chops to a large resealable bag and whisk together until well mixed
Add pork chops to bag, seal, and place in the refrigerator to marinate at least one hour (2 - 3 hours optimizes flavors)
Remove pork chops from the refrigerator about 20 minutes prior to cooking and shake off the marinade
If roasting in the oven: Place pork chops in a prepared baking dish or pan (lightly misted with oil from a non-aerosol sprayer). Roast for 15 minutes, then finish on broil for 5 minutes or until lightly browned. Let meat rest for 5 minutes before serving to allow the juices to redistribute
If grilling: Cook pork chops on one side for 4 minutes. Flip and cook for another 3 minutes. Briefly sear the edges. Remove from heat to a platter and allow to rest 3 to 5 minutes before serving
Recipe Note
You can easily interchange the dry oregano for thyme, rosemary, tarragon or sage.
Pork should be cooked to an internal temperature of 170 degrees Fahrenheit.
