8 large leeks

2 tablespoons avocado oil
- 2 Herbes de Provence

1 teaspoons ground pepper

½ teaspoon Himalayan pink salt
Directions
Trim leeks so that you have the 5-8 inch white and light green part available to cook
Cut the leeks lengthwise in half
Rinse the leeks well and remove any grit. Pat the leeks dray and place them in a 9x13 baking dish
Drizzle them with oil and sprinkle with the herbs of Provence, salt and pepper
Finally, cover with foil and back until very tender, 50 minutes to an hour
Once you see that they are tender, continue cooking uncovered for about 10 minutes or until they are golden brown
