Ingredients
- 1 medium red onion, thinly sliced

1/2 cup apple cider vinegar, with “the mother”
- 2 tablespoons raw honey
- 2 teaspoons fennel seeds
- 1 teaspoon pink Himalayan salt or grey sea salt
Directions
Stir together vinegar, honey, fennel seeds, and salt in a pint-sized glass jar
Add the sliced onions and press down until they are fully submerged in the liquid
Seal with the lid; leave out at room temperature for 1 hour
- Refrigerate until ready to use. It is ready to serve in a few hours but will be even betr the next day!
Stays fresh in the fridge for up to 3 weeks
