Rainbow Mango Salad is a vibrant, refreshing dish bursting with tropical flavors and colorful vegetables. This healthy and light salad is perfect as a side dish with a zesty lemon-ginger dressing that brings all the flavors together.
Ingredients
- 2 ripe mangos, peeled and diced
- 1 whole bell pepper, diced
- 1 whole cucumber, diced
- 1/2 whole red onion, thinly sliced
- 1/2 cup fresh basil, sliced
- 3 tablespoons lemon juice
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1 tablespoon avocado oil or olive oil
- 1 tablespoon fresh ginger root, grated or minced
- 1/4 teaspoon Himalayan pink salt
Directions
In a large bowl combine the diced cucumbers, bell pepper, mangos, basil, and red onion and mix thoroughly
- In a small-sized bowl mix together the lemon juice, honey (or maple syrup), oil, salt, and ginger until smooth. Pour the dressing over the premixed salad and toss to mix. Serve and enjoy!
