- 1 tbsp low-sodium organic vegetable broth
- 1 bulb of fresh garlic, separated into cloves and peeled
- 2 large red onions, halved and cut into wedges
- 4 bell peppers, halved, seeded, and cut into strips
- 2 zucchinis, sliced into rounds

Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper
- In a small bowl, whisk together the apple cider vinegar, lemon juice, vegetable broth, and chopped fresh herbs until well combined. Set aside
- Arrange the garlic cloves, red onion wedges, bell pepper strips, zucchini rounds, and Brussels sprouts on the prepared baking sheet
- Drizzle the herb-infused apple cider vinegar mixture evenly over the vegetables, ensuring they are well coated
- Season the vegetables with salt and pepper to taste
