Ingredients

2 tbsp lemon juice, freshly squeezed
- 2 tbsp organic Dijon mustard
- 1/2 tsp Himalayan pink sea salt

1/2 tsp organic honey
- 5 tbsp extra virgin olive oil
- 1 lb organic carrots, washed, peeled, and grated into large shreds. (A food processor does this quickly)
- 1 tsp dried parsley
Directions
In a small bowl, whisk together the lemon juice, organic Dijon mustard, Himalayan pink sea salt, and organic honey until well combined
While whisking continuously, slowly drizzle in the extra virgin olive oil until the dressing is emulsified
Place the grated carrots in a large mixing bowl
Pour the dressing over the grated carrots and toss until the carrots are evenly coated
Sprinkle dried parsley over the salad and toss again to distribute evenly
Serve immediately, or refrigerate for about 30 minutes to allow the flavors to meld
