Ingredients
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 teaspoon ground turmeric
- 1 teaspoon fresh ginger, grated

1/2 teaspoon Pink Himalayan salt, or to taste
- Zest of 1 lemon
- Juice of 1 lemon
- Freshly ground black pepper, to taste
- Chopped fresh parsley or cilantro, for garnish (optional)

Note: 1 tablespoon avocado oil for toasting spices (optional)
Directions
Optional: In a medium saucepan, heat 1 tablespoon of avocado oil over medium heat. Add the ground turmeric, black pepper, and grated ginger, and toast for 1-2 minutes, stirring constantly, until fragrant.
In the same saucepan, combine the rinsed quinoa, water or vegetable broth, and Pink Himalayan salt. Add spices if skipping first step
Bring the mixture to a boil over medium-high heat
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed
Once the quinoa is cooked, remove the saucepan from the heat and let it sit, covered, for 5 minutes
Fluff the quinoa with a fork, then stir in the lemon zest and lemon juice
Garnish with chopped fresh parsley or cilantro, if desired, before serving
