Ingredients
- 4 zucchini, spiralized
- 4 large carrots, spiralized
- 1/2 cup fresh parsley or microgreens, loosely chopped for garnish
- 2 large avocados, peeled, pitted, and quartered to fit into food processor
- 1 cucumber, peeled and sliced to fit into food processor
- 1 fresh lemon, juiced
- 3 cloves fresh garlic, minced

1/2 tsp Himalayan pink sea salt
- 1/2 tsp ground black pepper
Directions
Combine avocado, cucumber, lemon, and garlic in a food processor and puree. Sauce should be smooth
Add salt and pepper and blend one more time to ensure it is all incorporated
Place noodles in a large bowl and toss with sauce to evenly coat
Top with garnish and serve immediately
