Ingredients

2 cups mixed leafy greens (kale, spinach, etc.)
- 1 apple, thinly sliced
- 1/4 cup walnuts, chopped
- 1 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 tsp raw honey or 100% monk fruit (optional)
- 1 tbsp apple cider vinegar

Directions
In a large bowl, combine the leafy greens, apple slices, and chopped walnuts
In a small bowl, whisk together the olive oil, Dijon mustard, honey (if using), and apple cider vinegar until smooth. Season with Pink Himalayan salt and pepper to taste
