Ingredients
1 white or yellow onion, diced or chopped
1 cup organic low sodium beef broth
1 red bell pepper, chopped
2 cloves fresh garlic (minced)
1 tsp ground black pepper
1 tsp Himalayan pink salt
1 tsp ground thyme
1 tsp dried basil
1 tsp dried basil
1 tsp dried oregano
1lbs organic grass fed ground beef or ground chuck
1 egg
1 cup Panko, optional and finely crushed
1/2 cup tomato sauce with garlic and herbs, no salt or sugar added *
Add broth or water to a skillet or frying pan over medium heat. Saute the onion, bell pepper (if used), garlic, salt, pepper, thyme, basil, and oregano with the broth/water for about 10 minutes or until the liquid has evaporated. Remove from heat and cool to room temperature
While the onion mixture is cooling, cover a jelly roll pan or other rimmed baking sheet with aluminum foil and lightly mist with olive oil (non-aerosol)
In a medium sized bowl, combine beef, egg, onion mixture, ½ of the tomato sauce and panko crumbs (if using)
Mix well and form into one large or two smaller loaves and place on the foil line pan. Top with the remaining tomato sauce and place in the oven for about 35 minutes. Remove from oven and serve
Recipe Note
*You can substitute plain tomato sauce and mix in ¼ tsp each of dried thyme, basil, oregano and garlic powder
