Ingredients

1.5 lbs lean ground beef
1 large yellow onion, diced
1 medium green pepper, diced
2 celery stalks, chopped

1 large tomato, chopped
28 oz canned diced tomatoes with juice (organic, unsalted)
1-2 tbsp tomato paste
1.5 cups organic low sodium beef broth
16oz Homemade Healthy Salsa (can be found in recipe section)
1 ½ tbsp chili powder
2 tsp dried basil
1 tsp onion powder
1 tsp garlic powder
1 tsp dried oregano
1 tsp paprika powder
1 tsp cumin powder
1 ½ tsp Himalayan pink salt
1 tsp ground black pepper

For Garnish

1 large fresh tomato
2 green onions, chopped for garnish

Directions

In a large nonstick skillet or pot, cook the ground beef over medium heat with half of the minced garlic. Break it up evenly and cook until browned (7–10 minutes). Drain excess fat if desired.
Add the remaining garlic, diced onion, green pepper, and celery to the beef. Cook over medium heat until the onions are translucent and vegetables soften (7–10 minutes).
Stir in the chopped fresh tomato, canned diced tomatoes (with juice), tomato paste, and beef broth. Bring to a boil.
Reduce heat to a gentle simmer. Add salsa, chili powder, dried basil, onion powder, garlic powder, oregano, paprika, ground cumin, salt, and black pepper. Stir well.
Let the chili simmer uncovered for 40–50 minutes, stirring occasionally, until the liquid reduces and the chili thickens to your desired consistency.
Taste and adjust seasoning as needed. For extra brightness, squeeze in some fresh lime juice just before serving.
Ladle into bowls and garnish with chopped green onions and the reserved fresh tomato.
