Ingredients
- 3 ripe bananas, mashed
- 1/3 cup unsweetened applesauce
- 2 cups rolled oats
- 1/4 cup unsweetened non-dairy milk (no added carrageenan)
- 1/2 cup chopped walnuts
- 1 teaspoon vanilla extract
- 1 teaspoon Ceylon cinnamon
Directions
Preheat your oven to 350°F and line a baking sheet with parchment paper
- In a large mixing bowl, combine the mashed bananas, unsweetened applesauce, rolled oats, non-dairy milk, chopped walnuts, vanilla extract, and Ceylon cinnamon. Mix until all ingredients are well combined
- Using a spoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them evenly apart
- Use the back of the spoon or your fingers to flatten each cookie slightly, shaping them into round discs
- Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown and set
- Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
