Ingredients
- 2 cups oat flour
- 2 tbsp baking powder
- 1/2 cup ripe banana, mashed
- 1 cup non-dairy milk, unsweetened & without carrageenan
- 2 tbsp vanilla extract

1/8 tsp pink Himalayan salt

2 1/2 cups cherries, frozen
- 1/4 cup maple syrup
Directions
Preheat the oven to 375°F. Line a shallow baking dish with parchment paper
- In a large mixing bowl, combine the oat flour, baking powder, and Pink Himalayan salt
- In a medium bowl, whisk together the mashed banana, milk, and vanilla extract.
- Pour the liquid mixture into the dry ingredients and stir to combine
- In a separate medium bowl, mix the cherries and maple syrup
Scoop half of the oat flour batter into the baking dish
Layer the cherries on top of the batter in the baking dish
Drop the remaining batter over the cherries, creating pockets of cherries in between
- Bake for 40 minutes, or until the top is golden brown
