Ingredients
- 1 medium red onion, diced (or 1/2 large)
- 1 can chickpeas, rinsed and drained (about 1 1/2 cups)
- 1 can black beans, rinsed and drained (about 1 1/2 cups)
- 1 cup cherry tomatoes (red and yellow), halved or diced
- 3 tablespoons lime juice (from about 2 limes)
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon Pink Himalayan salt
- 1/2 teaspoon ground cumin
Directions
In a large mixing bowl, combine the diced red onion, chickpeas, black beans, and cherry tomatoes
In a small bowl, whisk together the lime juice, extra virgin olive oil, Pink Himalayan salt, and ground cumin
Pour the dressing over the bean and vegetable mixture and toss well to combine
Taste and adjust the seasoning with more salt or lime juice if needed
Let the salad sit for at least 10-15 minutes to allow the flavors to meld together before serving

Five Star and I usually don’t like chickpeas. The fresh limes really brighten it. Great recipe all the way around, ingredients and dressing. Used low sodium beans.
